I'd use 35mm2 cable if I had it, rather than go and buy 50mm2. It's not like it's a competition vehicle where you'll winch for long periods of time. If it's to get yourself or someone else pulled out of a muddy hole in a track, I think it will be perfectly fine. I'm using 35mm2 with the Husky, and while it says in the documentation that it can draw about 400A, 290A is the maximum I've seen it pull when using a clamp on DC ammeter to load a series III 109 with seized back drums up a ramp onto a trailer.
Also, once the load starts rolling, resistance will decrease and reduce the current draw. That max amp is also usually at the stall limit of the winch, something that should be almost impossible to reach in most circumstances. The other thing that will make a huge difference is to use a snatch or pulley block. This will halve the load in the first place. So, 35mm2 with your winch using a pulley block should be perfectly good enough. That's what I'd do, but it's your decision! :-)
The switch you picked looks good, just like the Blue Sea one I mentioned. A fuse if a good idea too as you said, I forgot about that when I was thinking through my setup again! For the switch, check Motonet as I saw them there for €40 including VAT.
About the relay. I might be wrong but I think that's just a charging relay. It won't allow you to manually connect your two batteries when you're winching, which is something you might want to do. The cheapest option would be a second switch to connect them together when you need. You could use one of the Blue Sea battery switches which allows you switch on Battery A, Battery B, or combine the two also. That would work.

The switch allows you combine batteries for self jump starting if your main battery has died, has a remote switch to fit to your dashboard allowing you isolate/combine/auto connect the batteries, takes 500A continuous, 700A peak and otherwise handles the charging of your battery bank automatically.
I have one fitted to my 110, and you're very welcome to have a look at the setup any time you want. I'm in Espoo some evenings visiting another Landrover guy there. It's an expensive enough option but I just wanted a fit and forget solution that wouldn't burn out under load or give me any trouble. It's a fit and forget way of doing it. I have my CB, VHF/UHF radios, auxiliary power points, winch and a satellite fusebox for other 12v loads all connected to the second battery, while starting, foglights and standard loads are run off the primary battery. One of these days I will get around to wiring up my additional spot beams too.
The two Optima's are kept in good condition by the ACR. Up until recently my Alternator was only a 50A unit, and it was only when the diode rectifier failed that I had any charging issues!!! Now with a 90A Pajero alternator fitted, I know I don't need to worry about a thing when it comes to the battery loads and charging distribution.
