I think you will be pleasantly surprised with regards to insuring your vehicle here. Unlike in the UK, and, I'm guessing Ireland, modified or offroad vehicles don't fetch any special premium. Any insurance company here is probably more than happy to insure it, but shop around, prices can vary somewhat.
Since the vehicle is that old, the insurance company will mostly look at the date it was first registered and value it based on that, ignoring all modifications, improvements and additions... Good news is that you will end up paying a lot less, downside is that because of the low book value it is extremely likely to get written off in an accident. You may want to have it inspected and revalued by the insurance company to reflect it's actual value better.
